cauliflower soup


i love soup. no, you don't understand. i LOVE soup. this cauliflower soup is so creamy, it's dreamy. the best part? it's made sans cream! so not only is it delicious, it's totally healthy! and a breeze to whip up, it makes for a great lunch or starter.

jDub gave me the most amazing garlic parmesan croutons that she made. hopefully she'll post the recipe soon. i almost ate them all as a snack but saved some to savor with my soup.

cauliflower soup
serves 4-6
1 head cauliflower (mine was 1.5 lbs)
1 small onion, diced
3 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon fleur de sel
1/2 cup white wine
3 cups low sodium chicken broth
2 cups water
1/4 cup freshly grated parmesan

remove the leaves and thick core of the cauliflower and chop coarsley.

in a large pot or dutch oven, heat the olive oil and butter until the butter melts and starts to foam. add the onions and sautée approx. 3 mins until translucent and tender. add the salt and garlic and sautée another minute or two. add wine and cook until it's reduced by half. add the cauliflower, chicken stock and water and bring to a boil. turn down the heat and simmer for 20 mins or until the cauliflower is extremely soft.

turn off the heat. puree in a blender in batches (it took me 3 batches), until smooth and creamy. return to the pot. heat again if needed, add the parmesan and mix until smooth. season with more salt if needed (i didn't need to).

serve warm, topped with freshly cracked black pepper.
